RESPONSABILITATI / BENEFICII:
The Head Chef must:
Ensure the quality of the food produced in all respects.
Ensure consistency in the quality of all dishes.
Ensure the rules and regulations that are known and applied by entire kitchen team.
Comply and support all Service standards, company policies and procedures in place.
Contribute to menu creation in line with customer needs and expectation and ensure their satisfaction in regards to food quality.
Keep constantly up to date with market, competition and food trends.
Have knowledge and experience of cost management
Contribute to food revenue by adapting to business needs and considering guest expectations.
Support a cost efficient operation by optimizing departmental productivity and food cost.
Support to minimize the need of maintenance and replacement of equipment by ensuring correct and careful usage.
Support cost-effective procurement as per business needs and established policy.
Management of the department on a daily basis according to budget, business needs and legal requirements.
Support succession planning, team development, time schedule management and vacation planning within the department
Attend, hold and chair regular departmental meetings and trainings
Ensure training of new employees
Ensure effective communication within kitchen
